Ingredients

For the Bruschetta Filling:

  • 10.5 oz (300g) fresh tomatoes, diced
  • ½ small red onion, finely diced
  • ½ small bunch fresh basil (about 2 heaped tbsp), finely chopped
  • ½ tbsp extra virgin olive oil
  • Salt and black pepper, to taste

For the Sandwiches:

  • 1 loaf (10.5 oz / 300g) ciabatta, sliced into 16 pieces
  • 1 ball (4.5 oz / 125g) fresh mozzarella, thinly sliced and patted dry
  • ⅓ cup (30g) freshly grated Parmesan cheese
  • ¼ cup (60ml) extra virgin olive oil
  • 1 garlic clove, peeled
  • Balsamic glaze, for serving (optional)

Step-by-Step Instructions

1. Make the Bruschetta

Place the diced tomatoes on a paper towel and gently press to remove excess moisture.
In a bowl, mix the tomatoes, red onion, chopped basil, ½ tbsp olive oil, salt, and pepper. Set aside.

2. Build the Sandwiches

Brush one side of each ciabatta slice with olive oil.
Lay half the slices oil-side down. Add mozzarella, a spoonful of bruschetta mix, and sprinkle with Parmesan.
Top with the remaining bread slices, oil-side up. Press gently to secure.

3. Toast to Perfection

Heat a skillet or griddle over medium heat.
Cook sandwiches until golden brown underneath, then flip. While the top side cooks, gently rub it with the garlic clove.
Continue cooking until both sides are crisp and the cheese is melted.

4. Serve It Up

Serve hot off the skillet. For extra flavor, drizzle with balsamic glaze just before serving.

Pro Tips

  • No Ciabatta? Sourdough or a rustic country loaf also works beautifully.
  • Make-Ahead Tip: Prep the bruschetta mix up to a day in advance and keep it chilled.
  • Crispy Trick: Don’t overcrowd the pan it helps each sandwich toast evenly.
